Learn how to craft the perfect Wagyu Beef Burger with Freedown Hills Olive fed beef.


Freedown Hills British wagyu beef is renowned for its exceptional marbling, tenderness and depth of flavour, developed through a finishing diet that includes mixed olives. Unlike standard mince, wagyu beef contains a higher level of intramuscular fat, which melts during cooking to create a rich, juicy and flavour-packed burger.


Because of this, seasoning should be minimal. The quality of the wagyu beef should be the focus. This method is designed to deliver a perfectly cooked wagyu beef burger, whether at home or in a professional kitchen.

INGREDIENTS:

200g Freedown Hills Olive-Fed Wagyu Beef Burger

1 table spoon Sea salt

1 table spoon of Cracked black pepper

1 brioche bun


METHOD:

  1. Remove the wagyu beef burger from the fridge and allow it to come to room temperature before cooking. This helps even heat distribution and achieves a better crust.

  2. Preheat a pan, ideally cast iron, over medium-high heat. Cast iron retains heat well and creates a defined sear.

  3. Do not add oil. Our wagyu beef has its own rich fat content, so it is unnecessary to oil the pan. The natural fat will render during cooking.

  4. Place the wagyu beef burger in the hot pan.

  5. Allow a proper crust to form on the underside by not moving the patty too early.

  6. Once a crust has formed, flip and repeat on the other side.

  7. Apply weight and pressure on the top of the patty to help form an even crust.

  8. Cook until the wagyu beef burger reaches an internal temperature of 70°C. Using a temperature probe ensures accuracy and consistency.

  9. Remove the wagyu beef burger from the pan

  10. Allow the burger to rest briefly before assembling.

  11. Serve in a brioche bun with your chosen accompaniments.


FOR A BACON CHEESBURGER:

  • Add cheese immediately after flipping the burger.

  • Add a small amount of water to the pan and cover to create steam.

  • Allow the cheese to melt evenly for around one minute.

  • Add cooked wagyu beef bacon for additional richness and texture.
