Wagyu Beef Yakiniku Recipe

Yakiniku is all about sharing, cooking and eating together around the grill. It is a Japanese style of grilling thin slices of beef over high heat, focused on quick cooking and simple flavours. It became popular in Japan after the Second World War, influenced by Korean barbecue, and has since become a staple way of cooking beef over charcoal or a hot grill.

Freedown Hills British wagyu works well here because of the marbling. The thin slices cook in seconds, developing light char while staying tender. This cut is ideal for grilling, where the fat renders quickly and adds flavour without drying the meat out.

 


INGREDIENTS:

200g Freedown Hills Olive-Fed Wagyu Yakiniku

​2 tbsp Soy Sauce

1 tbsp Sake

1 tbsp Mirin

1 tsp Sugar 

1 small Garlic clove

1/2 tsp fresh Ginger, grated (optional, but worth it)

​1 Bell Pepper

1 Small Onion

1/2 Courgette

80-100g Mushrooms

​Rice or Lettuce Leaves (For serving)


METHOD:

  1. Remove the wagyu from the fridge 30 minutes before cooking to bring it to room temperature.

  2. Prepare the yakiniku sauce by mixing soy sauce, sake, mirin, sugar, and grated garlic and/or ginger. Adjust to taste.

  3. Prepare the vegetables and sides.

  4. Heat a grill pan or griddle until very hot.

  5. Place the wagyu slices on the grill and cook for 15–20 seconds on each side.

  6. Remove immediately, do not overcook.

  7. Dip the beef into the sauce and serve with vegetables and rice or lettuce.

  8. Repeat until everything is cooked.
